the great tofu scramble debate
It's that time again, ladies and gentlemen, when this blog brings you very controversial topics of great importance. Today's issue- that great vegan staple, tofu scramble. I've sang the praises of this dish before- how delicious, how versatile, how healthy, and how plain awesome it is. It's one of my all-time faves.
But then I became aware of a schism in the tofu scramble universe. It appears that SOME PEOPLE *cough*Portlanders*cough* cube their tofu instead of mash it. Am I insane, or is that just a stir-fry with tofu and not really a scramble? What say you, wise and lovely readers? WHAT SAY YOU???

I won't lie, the best tofu scramble of my life was cubed and from Portland!! I used to be a crumbled believer but after that scramble, I'm all about the cube.
Scrambled tofu is my favorite dish ever! Tumeric and tofu belong together. :) Also, you have to use soft tofu. I prefer mine with mushrooms and kale. And yes, veg*ns get militant about their scramble recipes!
Um cubed tofu... that's just weird and wrong! What's scrambled about cubes?

I think scrambled tofu should be scrambled, in other words, not cubed! It keeps it interesting and true to its name.

I'm with pixiepine: as long as it tastes good. We used to make it scrambled until we read about cubing it on a recent *cough*brunch cookbook*cough* :) Since then we've been cubing it and loving it just the same.
Scrambled tofu has to be, well, SCRAMBLED. That's why they call it that!
I prefer my tofu actually scrambled...as in mashed up yummy goodness. I've had it cubed before and it just makes em think stir-fry.
I don't think of it as a scramble if the tofu is cubed.
I definitely like SCRAMBLED not cubed! When you scramble it there is so much more flavor coating each piece of tofu.....sooo good. I just ate dinner and now you've got me wanting a big tofu scramble!
When you crumble it, it gets mushy and slimy. Like vomit. Ewwwwww. Cubed all the way!
i totally agree, bazu! gotta mash if for a scramble. i've had it cubed tons of times and it's just not the same. mash it baby!!

NOT cubed all the way, I even add soft tofu for some extra soft runniness. yep.
i like it scrambled, but I usually make it cubed. because I am lazy. I it easy and no-mess to just cube up that block of tofu... whereas with the crumbled tofu there's ALL THAT CRUMBLING to be done. I just don't have the energy!

I'm sure cubed tofu is delicious, but, like you said, that seems like an entirely different dish to me! More like dinner-y.
You are not wrong. Scrambled tofu is *scrambled* tofu. Cubes are not scramble. Scrambles cannot be cubed. It's not even a fine-line!
I was just thinking about this the other day!! Mashed all the way, sister, though I do leave a few larger mashed pieces. Cubed tofu is stir fry, not scramble.
Cubed tofu is delicious, but it isn't scrambled tofu! The mushier and noochier the better!
Tofu crumbs don't get slimy and gross if you press and drain the tofu first, use minimal water/oil in the pan, and put in lots of nooch! LOTS OF NOOCH!
You know, I've often thought the same thing...the term "scramble" really speaks more to tofu mashed into smaller pieces. I have to admit, though, that I like cubes better for texture reasons. I rarely make tofu scramble at home, but when I made it a few weeks ago, it's true, I cubed the tofu. Next time, I'll give the mushier mashed tofu another shot. :)

I'm with the Semantics crowd on this one: by definition scrambled tofu must be scrambled. That I also prefer my tofu scrambled to cubed, is a different debate.
I think the confusion is that some folks prefer cubed tofu--which is perfectly legit (there's a local veg restaurant in Ann Arbor that server tofu rancheros cubed, which I like), but don't have a good way of referring to a breakfast-style cubed dish. So they've co-opted the "scramble" name, suggesting that "scramble" refers to the overall flavor, not to the physical act of scrambling.
I mash my scramble, but I'm not technically vegan, so do I get to vote?? ;)
Cubed it totally just a stir-fry, not a scramble. That said, I think I might actually prefer the cubed scrambles.

As the mighty dic.leo.org states, this just means something roughly mixed as in topsy-turvy.
So per linguistics, both are scrambled, - but as an analogy to eggavorous scrambled eggs, methinks scrambled tofu should be mashed, - which I, if I may say so, always do if the fam needs their analogical fix, - anything demanding the use of a knife and the need for cubing definitely is a stirfry!
I'm a baby vegan, but in my opinion, cubes are different from scrambles.
I agree with you. If it's not all SCRAMBLED up, then it's a stir-fry, not a scramble. They're both yummy either way though!

uhm... it never ever every occurred to me to use a spatula to crumble tofu. ? I always used my fingers. And they get tired. Because of my laziness problem, that is. But maybe I'll try the spatch next time. Good idea. then our friendship can be restored.
I encountered this at a cafe recently...how is it a scramble if it's cubed? I'm not saying it's not just as delicious but still...
definitely mush it up. i know some people define themselves as post-egg scramblist (posers) and they'll probably be happy to cube it because they think the scrambled way is too wet and mushy but to them, i say PRESS THE TOFU FIRST. press it with some paper towels or clean tea towels for at least ten minutes to get the excess moisture out. then rip the soy to shreads with YOUR HANDS. no knives, yo. i may be a purist in this way but let me tell you i have convinced many a post-egg fool with this technique.

Crumbled, all the way. It's all about the nooks and crannies in the crumbled tofu that catch the flavours and make my mouth happy.
I'm a crumbler... I've never seen cubed scramble here in Portland, every place I eat is crumbled. Anyway, those who eat cubed scrambles are clearly sick in the head, so what are we debating again? ;)
Crumbled crumbled crumbled! I had it cubed once at a lovely Pancake House with a vegan menu. And it was good.....but I am a crumbled kinda girl!
Cubing tofu is way too much trouble in the morning. Crumbles all the way!
