Sometimes, I catch on really late. For example, I feel that I'm the last person to realize that there are a lot of unexpected produce items that you can eat raw! Not necessarily marinated, dehydrated, sprouted, or anything else, just straight up raw!
Fresh summer corn, straight off the cob? Yes.
Raw beets? Yes. I've graduated from shredding them into salads to just eating them as veggie sticks.
Sweet potatoes? Yes! (sweet potatoes are not actually potatoes, as you might know)
collard greens? yes- they make awesome wraps! I only started cooking collard greens 5 years ago- before then, I had the image that they had to be cooked for hours and hours. Hey, we can all make mistakes.
Here are some other things that I've been delighted to eat without cooking:
asparagus
turnips
oats (as in muesli)

You stole all mine, so I'll go backwards. I had never had a cooked radish until earlier this year. So good!

For me, it'd be seaweed (i.e. not marinating it or anything beforehand) - I LOOOVE dulse!! :)
Raw broccoli stalks! I haven't tried the raw sweet potato yet, but I have a recipe to try.

Hm, the raw sweet potatoes and beets look interesting. I've never thought to try that.
The German in me agrees at the greatness of oats in muesli. Add a little yogurt and pile on a berry of choice, and yum. I'm also quite partial to raw chard in pestos.

I feel the same way...I eat a lot of raw food, but feel like I have just discovered there are so many other things out there that I can have raw and that I love! My grandmother has eaten' raw sweet potatoes for years and I still have not tried it out. I need to try that one soon! I think corn has been my new favorite discovery!

i wish oat flakes were raw - you have to soak oat groats for days before they're not incredibly chewy (ow my jaw!!)
Mmmm! I love chewing on a cob of raw sweet corn. So so good. I'm gradually working more raw veggies into my diet. Didn't grow up eating any, but at least now I put raw carrot shreds in my salad. One step closer to raw carrot stick snacks!
what a great post! I'm all about expanding what I can eat raw, I remember when I first tried raw corn, it's almost better that way!
Lately I don't cook oatmeal, I grind up raw whole groats instead and soak them overnight. Raw onions are great! Turnips too - if you soak thin slices of them in cold water they turn into chips that you can dip into cheezy sauce. I should give raw squash a whirl...
I'm a big fan of raw, shredded beets in salads or wraps. The only downside is that the get leaky and turn everything else pink!
Some veggies I prefer raw like turnips and butternut. Plus recently found a great raw potato salad made with raw sweet potatoes and homemade raw nut mayo, yummie.
