Summer Tasties

Two easy summery dishes (which incidentally go great together):

Penne with garlic and tomatoes and fresh basil from the garden. Lately, Daiku and I have been experimenting with getting intense, charismatic, assertive pasta, and then serving it with a simple sauce to let the pasta's characteristics shine through. It's a revelation!

Easy Marinated Radish Salad

Combine together and allow to marinate overnight:

1 cup red kidney beans
2 stalks celery, sliced thin
3-4 radishes (or 1 gigantic radish) sliced thin
1/2 cup thinly sliced english cucumber
1/4 cup rice vinegar
dash extra virgin olive oil
salt and pepper to taste

Before serving, top with a few basil leaves

I really want to experiment more with marinated salads, they are a great change of pace!

Hey Bazu, luscious post! i am a huge fan of marinated salads and veggies; the best way to eat a lot of 'em. Great recipe, looks easy to make. Your pasta photo is gorgeous. Love the colours and close-upness. Not just a revelation, but elation as well. Light and lively. Summery indeed. Mmmmmmmm.

my time in tuscany has definitely influenced my pasta preferences, and I must say - tomatoes, garlic, basil, and olive oil simply cannot be topped. It has got to be one of the all-time best flavor combinations ever discovered by mankind.
Now I am hungry!

YUM, that radish salad looks so fresh, Bazu. I can just imagine the crisp crunch of the radish from the way it looks in the photo! The simple pasta looks delicious too.

Sometimes the day just gets away from us and there's no time for blogging. *sigh* I'll throw up a post, visit a couple of bloggers, get busy and before I know it, a week has gone by. How does that happen? Anyhow, this post was worth waiting for. What lovely photos! The food looks delicious. Nothing compares to fresh basil. It's heavenly!

The pasta sounds simple and delicious. I just scored some free basil from one of my garden neighbors (I'm actually not growing regular basil this year, just Thai and Lemon Basil). Rob would definitely love the Radish Salad.

Hope all is well with you and Daiku :)

ooooh, a marinated radish salad?! Now that is revolutionary! Recently, Somebody (who was it?) was begging for a radish recipe for their CSA -- anything other than just chopping up the raw buggers and tossing in a green salad. Nobody had a suggestion! Thanks for the recipe. :)

That radish salad looks and sounds fantastic! Except for the celery. Do you think water chestnuts or jicama would be a good replacement? And did you eat the pasta warm or cold? They both look so good.

Hi Diann,
The celery does give the salad a unique flavor, but I'm sure water chestnuts or jicama would work just as well! Their crunch would hold up well to marinating.
We ate the pasta warm. (And then I ate the leftovers cold the next day for breakfast!)

Both dishes are gorgeous. I love pasta with a simple sauce too... when I eat pasta, which for some reason tends to be only occasionally. That pic, though, is enough to set off a craving for pasta even to me!

Wow, what amazing looking food! I could definitely go for that zucchini below. Mmmm.

I kept seeing your name on the blogs I visit and thought I'd stop by. I'll have to come again when I have more time. :)
