dandy eggplant warhol
After this post, a lot of you asked what Daiku and I ended up doing with the crazy, multi-knobbed white eggplant that we brought home from the farmers market.
Before I can answer that question, I must start by talking about another fantastic Melody tester recipe:
This was her Teriyake Glazed Tempeh, which we enjoyed with brown rice, garnished with toasted sesame seeds and scallions. The teriyake glaze was quite delicious, and the recipe left us with quite a bit extra. It was this extra glaze that we doctored up to make...
Miso-grilled eggplant! By adding some miso and rice vinegar to an already great sauce, we had the makings of a great marinade for the sliced eggplant. After marinading the eggplant for a while, we grilled it up, along with some pineapple slices and scallions. More marinade was brushed on everything as it grilled, adding moistness and flavor. I was amazed how sweet and lovely scallions become after being grilled.
These grilled goodies got served atop a bed of mixed greens (dressed with the marinade!), with a bit of brown rice and some more toasted sesame seeds. This was an incredibly satisfying meal, using flavors that we don't eat as frequently as we should!

Everything grilled looks soooooo good. I just woke up half an hour ago and should definitely not be fantasizing about grilled vegetables. God damnit. I'm supposed to make myself want to eat that damn oatmeal porridge but now I don't know if I can get enough motivation for it.
Wow, wish I could have invited myself over for dinner. This looks fantastic and I know from the ingredients that it must have tasted amazing too. I love Warhol Eggplant btw. :)

One of the farmers at the farmers' market that I go to has been selling little purple eggplants with the funniest noses like that. I love them!

Great idea, adding the miso to the glaze and using it on the grill like that.. I love eggplant with the flavors in the glaze.. miso would take it over the top.. and the grilled scallions.. just perfect!
I love the eggplant warhol...it almost looks like a worhol portrait when you abstracted it. (Before your warholization it, it almost looked like eggplant porn...)

Wow. This is one of the most scrumptious posts I've seen in a while! It's making me hungry just looking at it! Now I have to try to make up a recipe for something like that...mmm. And the eggplant Warhol is very creative. Good job!
Good on you for doing the farm animal walk and for putting yourself out there to fundraise--I've always found asking for money, even for causes I really believe in, to be really difficult.
I'm about to go raise some funds though to get you up to Boston so you can make miso grilled eggplant for me...that's a worthy cause...right?

Thanks for the info! If she's got a book coming out, I just might wait for that. Or make up my own. I've been itching to make a vegan version of the not so vegan Chinese honey garlic spareribs. I think a kick-ass vegan tempeh version is in order...
Oh, yum on Melody's recipes! Oh, yow-za on the warholian eggplant. I see a man's face in it too. Very bizarre. Very cool.
